Dinner Tonight: Semi-deconstructed Maki Edition
Air-Cured Tuna Wrapped Scallops, Ikura, Wasabi-Avocado Cream

I wanted to try something like a Spicy Scallop and Avocado Roll with a twist. Cured tuna is pounded thin, sliced and wrapped around a blackened scallop. I used ikura instead of tobiko, and pureed the avocado and wasabi to be the sauce.
Next time I’d think about adding some toasted rice to the plate, both for texture and to more fully pull off the “maki” idea. This was fun, though, and really quick.
